Chipset: I875P Canterwood + ICH5 (and ICH5R)

This is the chipset I am currently looking at for my new computer. I was wondering if anyone had information on the difference between ICH5 and ICH5R, because the price difference is around 30 dollars.

i would guess the 'R' version includes a Raid controller.

Correct. ICH5R includes SATA RAID (2 ports) for RAID 0. ICH5 has no RAID function.

newer bios updates enable RAID 1 when using IAA RAID Edition 3.5

Well, i have asus p4c800 deluxe and i must say that this thing is damn fast. It has ICH5 southbridge and i dont mistt that 'R' a single bit. The motherboard is perfectly stable and fast which is the most important.
